Life can always use more Maple Syrup

 

Uncle Richard and his wife Gale O'Brien started making maple syrup as a hobby 20 years ago. Since then their hobby has grown into a full-time business. At their home in Priceville Ontario they have approximately 3,000 taps in their sugar bush. Using what is known as the "modern" method of syrup making they collect their sap using a wet/dry tubing system through the bush. They then boil the sap in an oil-fired, stainless-steel evaporator at their sugar shack. To keep the taste consistant and spring fresh, they re-heat, re-filter, and hot pack the syrup every two to three weeks.
Maple Syrup Chicken
  • 3lbs. Chicken Breast
  • 1 1/2 cups pure maple syrup
  • 1 Tbsp fresh lemon juice
  • 1/2 tsp grated lemon peel
Wash and dry chicken. In a deep saucepan bring syrup to a boil. Boil gently for 2 minutes, stirring occasionally. Arrange chicken in a large skillet. Add syrup, lemon juice, and peel. Cover and cook on low for 45 minutes, turning occasionally. Cook, uncovered, for 15 minutes longer. Serve chicken with sauce spooned over.

Uncle R's Maple Jelly does not contain Pectin or any animal products, it's vegan! The only ingredients are maple syrup, agar agar, and water. How delicious! For those of you who thought you could never have jellies, think again! Use it on toast, pancakes, ice cream, yogurt, and really just about anything you feel like.
